Ryan - to answer all your OS 1.x questions (I'm a 1.3 user):

Regarding the caret: There is no caret and there never was a caret in 1.x. (I personally think it's much user friendly this way, you can write naturally without having to set where you want your text) The built-in keyboards, as well as Graffiti, have an I-bar. If you follow the "Using a Newton Keyboard with OS 1.x" article I wrote on the Newton Knowledge Wiki, you'll find that using the Newton Keyboard also makes the I-bar appear.

Regarding to-dos: In my opinion to-dos are much better in 1.x - you don't have to spend your time in dialogs - you just write, and to create a new to-do item, you drag a line across the to-do list, just like in the Notepad.

Regarding recognition: There IS Rosetta-style letter-by-letter recognition. Open Prefs and choose Recognizers. Also it would help if you configured Letter Shapes and Handwriting Style. Actually, 1.x is just as customizable as is 2.x - just explore the Prefs app. It's organized like the notepad - just press the up and down arrows at the bottom of the screen to scroll between settings. The same goes for the Formulas app.

Other things: to stop the "Do you want..." keyboard messages, install DontAsk by Steve Weyer.
There is one package that makes the Connection, In Box, and Out Box slips draggable, but I forgot its name (it's on UNNA). There's also another one that let's you specify which soups to search in Find. It can also be found on UNNA.
