Make sure your ROM image supports Appletalk. From

   The Quadra 700/900 ROM, for example, is characterized as "The worst
   known 1MB ROM." It, like some other ROMs (e.g., the one from the Mac
   LC), doesn't support AppleTalk. We had better luck with a 1MB ROM image
   from a Quadra 605 or LC/Performa 475/575. In addition to AppleTalk and
   Internet support, this ROM even gives you the famous Quadra startup
   sound when the emulator is launched. :-)

Victor's made some posts about this issue with wired ethernet that you
should probably have spotted during your websearch in the archives for
this very list in March of 2003. That should help you find the info from
him.

Even though you're using ad hoc mode, the wireless will latch onto the
best available signal, which might be your access point base if you have
one, and that may not know what to do with Appletalk if it's trying to
be too clever about things. Most at least won't route Appletalk between
wired and wireless sides, and some may refuse to deal with Appletalk at
all. Airports and a couple models of old Netgear APs are okay.
