Hi Matthew,
The only question I'm familiar with is Simplemail. That's right, you can't create a new email with Simplemail. I use Notes. After I finish writing my message, I tap the routing button on the top right of the note, select mail, then make sure that I'll be sending with Simplemail and tap Send. That's it.
