Well, in your title you state application discovery, but seem to only discuss unexpected Newton OS function, but I will discuss a few apps:
Casino: Cool game, play slots, poker, blackjack and more.
Pocket Quicken: This is the best finance program for the Newton. Awesome expense input program.
Hal: Have not tried it yet, but want to.
Tricorder: Love it!
Newton Press: the best bookmaking software
Text to Speech: Good for reading articles to you
Backdrop setting: I set my "favorites" folder as my backdrop. Now I always have my favorite apps up as the default screen.

something you discovered on your own
months or years after having used the
Newton or one of its applications.
Mine was the unexpectedly easy way I
could drag icons in and out of the bottom
bar to customize it.
