Yes, you can run NCU in classic. This is the best bet for
transferring works documents. Also there is Nsync, which has a text
sync plugin for the notepad.

I also use Bluetooth with Eckhart Koppens excellent Blunt software(plus
neo/IC/VC etc) to transfer stuff too and from the Newton using the
bluetooth file exchange program which is in the Utilities folder of
your OSX box. I can also use Blunt to transfer contact to my cell phone
or desktop via the Vcard format.
