Assist gets me some oohs and aahs. Also re-arranging things in dates, outlines, etc. The clipboard rocks too. When you do handwriting don't forget to show how corrections can be made, don't think that exists on anything else.
The built-in functionality alone is enough to put any other PDA to shame.
A couple of other goodies that aren't on your list (this is going to be a long demo!) Drag'n'Drop Names is cool, and MoreInfo is more info than you can shake a stick at.
Oh, and printing and faxing.
