I don't know of other tools that extract book contents.
if the book isn't too gigantic and you don't need to edit the HTML, you
could save to Notes instead of NewtWorks.

books are basically "compiled/paginated" which freezes things like font
size, page layout & breaks, etc. if you don't like having to rebuild a
book to change formatting, you could use something else like Paperback.
